Easy peasy pitta pockets recipe | Thomasina Miers

Ribbons of carrot and cheddar mixed with spring onions and just a little mayonnaise makes for the perfect impromptu pitta filler. And it's ready in under five minutes.

Serves 2

1 large carrot
2 small spring onions
A good quality mature cheddar
1 wholemeal pitta
A little butter
A little mayonnaise
1 baby gem lettuce

1. Peel the carrot, then shave paper thin slices of carrot into a bowl. Top and tail the spring onions and finely chop. Slice the cheddar.
2. Cut the pitta in half and put it in the toaster on a low setting until hot but still soft. The second the pittas pop up, spread the insides with a little butter then a generous teaspoon of mayonnaise.
3. Place slices of cheddar in each pitta half, followed by as much carrot as you can stuff into the pocket, a lettuce leaf and some spring onion. Devour at once.
