Apple and forest fruit compote | Student cookbook

Frozen berries are brilliant when fresh ones aren't in season, or if you can't afford to buy them fresh. This simple berry compote is also very quick.

Serves: 4
Cooking time: 15 mins

1 large bramley apple or 2 smaller apples (bramleys are best for cooking because they break down well)
250g mixed frozen berries
2-3 tbsp sugar and 3 tbsp water
Yoghurt and granola to serve

Peel, quarter, and core the apple. Slice it into a saucepan. Add the berries, sugar and 3 tbsp of water, stir, put a lid on the pan – or cover with foil – and bring to the boil. Simmer for about 7-8 minutes until the berries have completely thawed and the apple has turned into a puree. Check for sweetness, adding extra sugar to taste. Leave it to cool, if you've got time, then serve with a good dollop of yoghurt and a sprinkling of granola.

Tip: You can also have this compote with custard, cream, or use it as a crumble base
