Asian Chicken

4 chicken fillets
300g mange touts or snow peas
8 spring onions
4 heads of pak choi (bok choy)
4 cloves of garlic
4cm piece of ginger
1 tbsp of rapeseed oil
1½ tbsp of soy sauce or tamari sauce
2 tbsp of sesame seeds


1. Slice the chicken into thin strips. Prepare the vegetables: trim the mange touts or snow peas, slice the spring onions and chop the pak choi into bite-sized pieces; crush the garlic and grate the ginger.

2. In a non-stick pan, heat the oil over a medium heat. Sauté ½ the garlic and ginger for 1 minute.

3. Increase the heat to medium-high and add the chicken, vegetables and soy sauce, along with 2-3 tbsp of water. Stir-fry for 5-6 minutes, until the chicken is cooked through and the vegetables are crisp tender. 4. Sprinkle with sesame seeds before serving.
