Beef taco

Packed with wonderful Mexican flavours and crisp lettuce, tacos are a fun and easy dish to throw together. So put the knives and forks away and enjoy this finger-licking meal with family or guests.


  • 1 tbsp of olive oil
  • 2 red onions, finely chopped
  • 300g lean minced beef
  • 1 tsp chilli powder
  • 1 tsp of garlic powder
  • 1 large tin of chilli beans
  • 2 tomatoes, sliced
  • Fistful of fresh coriander
  • 4 handfuls of lettuce
  • 4 tbsp salsa
  • 2 tbsp low fat sour cream
  • 50g low fat cheddar cheese, grated
  • 4 tacos

1. Add the olive oil to a heated non-stick pan. Add half the chopped red onion and minced beef. Cook for 5 minutes.

2. Add chilli powder, garlic powder and chilli beans, cook for a further 8-10 minutes or until cooked thoroughly.

3. Add the tomato, fresh coriander and the remaining red onion to a bowl and mix together. When beef is cooked, add it and mix well.

4. Lay salad leaves at the bottom of a bowl and spoon the mince meat mixture over. Top with salsa and sour cream. Sprinkle with grated low fat cheddar cheese. Heat the taco shells in an oven. Spoon the mixture into a taco shell and enjoy.
