Chicken and herb casserole

8 tsps of olive oil
200 g mushrooms
100 g carrots
2 tins of tomatoes, tinned, large can
4 chicken fillets, medium
12 potatoes, new
4 sprigs of fresh rosemary
1. Preheat the oven to 200 C. Fry the onion in oil until transparent.
2. Add the mushrooms, carrot & tomatoes. Transfer to a warmed casserole dish and lay the chicken in the centre.
3. Cover with layers of potato. Sprinkle with rosemary and bake for about 1 hour.
