Christmas chestnut soup

A delicious Christmas Soup!


  • 4 tsps of vegetable oil
  • 1 medium onion
  • 1carrot
  • 450g roasted chestnut
  • 2 vegetable stock cubes
  • 1 pinch of cinnamon
  • 110g Blue Stilton
  • 1 tbsp of flat leaf parsley
  • 2 baby new potatoes

Heat the oil in a large saucepan and cook the chopped onion, carrot and celeriac over a medium heat for 5 minutes.

Add the chestnuts, 1.2 litres of vegetable stock, cinnamon and potato.

Bring to the boil, then reduce heat, cover and simmer for 25-30 minutes until the vegetables are tender.

When the soup is cool enough, purée in a liquidiser(in batches if necessary) and season to taste.

Reheat the soup and serve in warmed soup bowl stopped with crumbled cubes of Stilton and parsley leaves. fibre.
