Cinnamon, apple & raisin compote

A lovely blend of flavours mean this low fat breakfast tastes as indulgent as your favourite desserts.

Ingredients

  • 60g raisins
  • 1 lemon, zest and juice
  • 1 cinnamon stick, broken in half
  • 2 tbsp fruit sugar
  • 6 dessert apples
  • 8 tbsp of low fat natural Greek yogurt

Method

Place raisins, lemon zest, cinnamon stick, sugar and 150ml water in a small saucepan. Cook on a low heat until sugar has dissolved, stirring occasionally. Then simmer for 5 minutes.

Pour the lemon juice into a small bowl. Peel and quarter the apples. Remove the core and seeds and cut each quarter into 3 thick slices.

Toss the apple slices into the lemon juice, then tip both the juice and apple slices into the hot raisins.

Bring back to boil, cover and reduce the heat while simmering for 5 minutes until apples are cooked but still holding shape. Transfer to a bowl.

Once cooled, cover and chill. Serve with yogurt.
