Creamy Tarragon chicken

400g chicken fillet
500ml of low fat crème fraiche
1 tbs of Dijon mustard
1 tbs of dried tarragon
½ lemon
3 tbs of flour
1 tsp of olive oil

1. Chop the chicken breasts into strips and coat with the flour.
2. Heat the olive oil in a pan and cook the chicken breast strips at a high heat until golden brown. Turn the heat down low.
3. Add the crème fraiche, tarragon and mustard to the pan with the chicken and stir.
4. When simmering add the lemon juice and a pinch of pepper. Cook until the chicken is cooked through and serve immediately.
