This fruity beef curry is sure to set your taste buds tingling. Pairing it with fibre-rich brown rice will keep you feeling satisfied for longer.
- 2 onions
- 400g of lean diced beef
- 1 tbsp of curry powder
- 1 apple
- 100g of sultanas
- 2 tins of chopped tomatoes (400g each)
- 4 tbsp of low fat yogurt
- 1 tbsp of olive oil
- 160g of brown rice, uncooked weight

Prepare the rice as per packet directions.
Add half the olive oil to a non-stick frying pan and cook the beef on high heat until browned through, drain off any excess fat and liquid and set aside on a plate.
Add the remainder of the olive oil and sliced onion and cook on medium heat until softened. Sprinkle in the curry powder and continue to cook until the curry powder becomes aromatic.
Return the beef to the pan and add the chopped apple, sultanas and tomatoes and simmer gently, uncovered, for around 30 minutes.
Stir in the yogurt just before serving with boiled rice.
