Get on top of your IRON-ing!

As our lives are getting busier, many of us have less time to spend cooking and preparing food. Luckily, there are a whole host of convenience products now available in the supermarkets, many of which are designed with our waistlines in mind! These meals are not only rich in iron (see our Feed your Need feature on iron this week) but take no more than 15 minutes, from start to finish!

Beef and broccoli in black bean sauce

Heat 1 tsp oil in a large frying pan or wok and stir-fry 500g lean beef, cut into strips, until it is sealed. Add a head of broccoli, broken into florets and cook for another minute.

Pour in a jar of black bean sauce and simmer for around 10 minutes.

Serve with egg noodles.

Makes 4 servings.
Nutrition information: 290 calories, 10g fat and 14g carbs (4 Units)

Mixed bean curry

Drain and rinse a 400g tin of mixed beans. Place these in a saucepan along with 400g frozen spinach and a jar of curry sauce of choice – but make sure the sauce has less than 8 grams of fat per 100 grams. Simmer for a few minutes and serve with boiled rice and mini naan bread.

Makes 4 servings.
