Healthy high-protein satay chicken skewers with brown rice and egg on top

Bring the taste and warmth of Indonesia to your kitchen this cold winter by cooking this high-protein meal. This recipe will have your taste buds in a frenzy, when the soft egg yellow breaks all over the brown rice. Plus with that peanut sauce from the chicken you will want to repeat this every night for dinner!

Ingredients

4 boneless chicken breasts, cut into cubes and put on skewers.
4 tbsp coconut milk
5 tbsp all natural peanut butter
Juice of half a lime
2 tsp soy sauce 
2 tbsp olive oil 
1 chopped red chilli 
2 eggs
1 cup cooked brown rice 

Method

Preheat oven to 200°C and turn on grill. Blend together the coconut milk, peanut butter, lime, olive oil, chilli and soy sauce to make the sauce. Coat the chicken in the sauce and then grill in the oven, turning skewers every few minutes. In the last 5 minutes pour the rest of the sauce on top. Once cooked, place the skewers on a plate with a side of brown rice, topped with a lightly fried egg per person.
