How to make cauliflower cheese


100g mature cheddar cheese (or cheese of choice)

400ml milk

1 large cauliflower (cut up into small florets)

50g butter

50g plain white flour

Salt and pepper


- Cook the cauliflower florets in a saucepan for 5-6 minutes

- Drain the florets and place in an oven-proof dish

- Preheat the oven to 200°C

- Then place the butter into a saucepan and melt on medium heat. After this add in the milk and stir together. 

- Add the flour into the pan and mix together until there are no lumps of flour and the mixture has thickened

- Take off the hob and add the cheese. Stir together and then pour over the cauliflower

- Bake in the oven for 20 minutes or until golden
