How to make ice cream


3 large egg yolk

270ml whole fat milk

270ml double cream

2 tsp. vanilla extract

110g white sugar


- Place the milk, cream, vanilla extract into a saucepan. Bring to a boil and then turn the heat off, let the mixture cool

- Meanwhile, separate the yolks from the whites of the eggs. Then whisk the yolks and sugar together until smooth and pale

- When the milk mixture is cool slowly start mixing it with the egg mixture. Stir repeatedly

- Strain the mixture into a saucepan. Then cook on a low heat until the liquid thickens. You will know this has happened when the liquid starts coating the back of the wooden spoon

- Strain once more and then place in a bowl and let cool again

- Once cooled churn through an ice-cream machine. ( follow the instructions for the machine)

- Then freeze in a container
