Italian tuna and bean salad

Who says tasty meals need to take hours. This Mediterranean inspired dish is ready in less than 5 minutes and will have you dreaming of al fresco dining in the sun.

2 tins of mixed beans (400g each), drained & rinsed
2 tins of tuna (180g each), drained
1 red pepper, chopped
1 red onion, finely sliced
16 green olives
2 tbsp of chopped parsley
1 tbsp of extra virgin olive oil
2 tbsp of red wine vinegar


1. Drain the mixed beans and rinse under running water to remove excess salt and sugar, then drain the tuna.

2. Place all the ingredients in a large bowl, dress with olive oil and red wine vinegar, and season with freshly ground black pepper. Toss gently to combine.
