Lamb with quinoa, apricots and almonds

2 lamb steaks
2 tbsps of low-fat yoghurt
½ tsp of ginger
½ tsp of ground coriander
½ tsp of cumin
Clove of garlic, crushed
70g of quinoa
4 dried apricots, chopped
4 dates, chopped
2 tbsps of flaked almonds
1 tbsp of lemon zest
2 tbsps of fresh mint, chopped
1 tbsp of olive oil


1. Marinate the lamb steak for 30 minutes in the yoghurt mixed with the ginger, coriander, cumin and garlic.

2. Prepare the quinoa following pack directions, then mix in the apricots, dates, almonds, lemon zest, mint and olive oil.

3. Grill the lamb 4-5 minutes each side, or to your liking, and serve on the quinoa.
