Mediterranean-style chicken & quinoa salad

A wholesome dish that is packed with high quality protein sources like chicken and quinoa. On top of the health benefits of this low fat recipe, a seductive flavour is created due to the combination of traditional Mediterranean ingredients used.

Ingredients

  • 200ml water
  • 1 chicken stock cube
  • 1 garlic clove, peeled
  • 100g quinoa, uncooked weight
  • 1 tbsp olive oil
  • 2 medium chicken breasts, cut into bite-sized pieces
  • 3 tomatoes, sliced
  • 12 olives
  • 2 tbsp reduced fat feta cheese
  • 1 tbsp of fresh parsley
  • 1 tbsp of fresh chives
  • 2 tbsp of lemon juice
  • 2 tbsp of balsamic vinegar

Method

1. Bring the water, chicken cube, and garlic to a boil in a saucepan. Stir in the quinoa, reduce heat to medium-low, cover, and simmer until the quinoa is tender and the water has been absorbed, about 15 to 20 minutes. Discard the garlic clove and scrape the quinoa into a large bowl.

2. In a non-stick pan, heat the oil over a medium heat and add the chicken pieces. Stir-fry for about 15 minutes until the chicken is cooked.

3. Gently stir the chicken, tomatoes, olives, feta cheese, parsley and chives into the quinoa. Drizzle with the lemon juice and balsamic vinegar. Stir until evenly mixed. Serve warm or refrigerate and serve cold.
