STARTER: BEETROOT, BACON AND FETA SALAD

Method

1. Cook the bacon under a hot grill. Once cooked blot it carefully with kitchen roll to remove as much fat as you can. Leave to cool.

2. Slice the beetroot and chop the feta into small cubes. Cut the now cooled bacon into thin strips.

3. Combine the beetroot, feta and bacon with the lettuce leaves and pecans.


MAIN: SMOKED SALMON OMELETTE

Ingredients

  • 8 eggs
  • 4 egg whites
  • 4 tbsp of lower fat cream cheese
  • 2 tbsp of chopped chives
  • 2 tbsp of chopped dill
  • Freshly ground black pepper
  • 4 sprays of cooking spray
  • 200g smoked salmon trimmings

Method

1. Whisk together the eggs, egg white and cream cheese. Season with the chopped herbs and freshly ground black pepper.

2. Heat the cooking spray in a non-stick frying pan and pour in the egg mixture. Gently push the egg towards the centre of the pan as the edges start to set, allowing more uncooked egg to run to the outsides of the pan.

3. When almost set, scatter the smoked salmon over the top. Cover the pan and cook for another 30-60 seconds.


DESSERT: CHOCOLATE ORANGE MOUSSE

Ingredients

  • The Saucy Fish Company salmon with chilli, lime & ginger dressing (2 fillets per packet)
  • 1 red pepper, chopped into bite sized pieces
  • 80g egg noodles, uncooked weight
  • 80g sugar snap peas
  • 60g beansprouts
  • 2 tbsp of fresh coriander, chopped

Method

1. Whisk together the Quark, fromage frais, sweetener, Options powder and grated zest from one of the oranges until well combined.

2. Cut the ends off the oranges and then set them on a chopping board. Using a sharp knife, remove the peel and pith and then cut the oranges into segments. Do this over a bowl to catch the juices.

3. Divide the orange segments and juice between 4 glasses and spoon over the chocolate mousse.

4. Chill in the fridge for at least 30 minutes, and dust lightly with cocoa powder just before serving.
