A zesty marinade is used on chicken thighs for a fresh and delicious dish the entire family can enjoy.

Ingredients
1 tbs of olive oil
2 tbs of lemon juice
4 cloves of garlic
1 tsp of oregano
8 skinless chicken thighs, skin removed
750g small new potatoes
2 lemons (sliced)

Method
1. Combine the olive oil, lemon juice, garlic and oregano in a glass or ceramic dish and use to coat the chicken. Set aside to marinade for at least 30 minutes.
2. Preheat the oven to 190ºC.
3. Place the chicken, marinade, potatoes (cut in half if large) and lemon wedges into a roasting tin and roast for ¾ - 1 hour, until the chicken is cooked right through, and the potatoes are tender.
