- 125g diced apple without peel
- 80 ml apple sauce or stewed apple
- 180 ml milk
- ½ tsp salt
- 1 ½ tsp baking powder
- 65g white sugar
- 220g plain flour
- ¼ tsp ground ginger
- ½ tsp ground cinnamon
- ½ tsp ground anise (optional)

Line a 12-hole muffin tin with paper liners.
Mix together sugar, cinnamon, ginger, and ground anise.
In a large bowl, mix flour, baking powder, sugar mixture, salt, milk, and apple sauce or stewed apple. Do not overbeat. Stir in diced apples. Spoon batter into 12 lined muffin cups.
Bake at 200 degrees C for 20 to 25 minutes, or until tops spring back when lightly touched. Allow muffins to cool for around 30 minutes before serving.
