Spicy vegetarian burrito

This quick and easy vegetarian burrito is proof that meat-free can be exciting and tasty.


  • 75g of firm tofu, crumbled
  • pinch of garlic powder
  • pinch of chilli powder
  • pinch of oregano
  • pinch of chilli powder
  • pinch of cumin
  • 1 small onion, diced
  • 1 tomato, diced
  • ½ red pepper, diced
  • 1 tbsp of olive oil
  • 1 tbsp of reduced fat mozzarella cheese, grated
  • 1 tortilla
  • 1 tbsp of salsa

1. Mix the crumbled tofu with spices and herbs, set aside.

2. Heat olive oil in a non-stick pan to a medium heat; add the tofu and vegetables; sauté for 4-5 minutes, stirring until the tofu is lightly browned. Mix in the salsa and heat for 1 minute.

3. Heat tortilla according to package directions; stuff with the tofu mixture and sprinkle with cheese. Serve with a green salad.
