1 tin of coconut milk, reduced fat
2 tbsp of Thai green curry paste
4 courgettes, sliced
1 large head of broccoli, sliced into florets
150g mange touts or snow peas
150g baby sweetcorn
100g cashew nuts, unsalted
1. Pour the coconut milk into a wide pan, stir in the curry paste and bring to a simmer.
2. Add the courgette and simmer for 5 minutes.
3. Add the broccoli, mange touts and sliced baby corn and simmer for a further 5 minutes.
4. Top with roughly chopped cashew nuts before serving.
