Warm cinnamon cake

A lovely alternative to a traditional Christmas Cake!

Ingredients

  • 205g soft margarine
  • 285g plain flour
  • 1 tbsp of baking powder
  • 185g caster sugar
  • 1 egg
  • 60ml milk
  • 2 tbsp cinnamon

Method

Preheat the oven to 200C/400F/gas mark 6. Grease a 23cm/9 inch cake tin and line base with greaseproof paper.

Sift the plain flour, baking powder, 125g caster sugar and a pinch of salt into a bowl. Add the egg, milk and 125g of margarine and beat for 1-2 minutes until smooth.

Spread the mixture evenly in the cake tin.

For the topping, mix the cinnamon, 6 tablespoons of caster sugar and 6 tablespoons of plain flour together and rub in 75g margarine to a crumbly texture. Sprinkle over the cake mixture in the tin.

Cook for about 25-30 minutes until risen.
