Winter warming beef casserole

We are in the midst of winter now and let’s face it we could all do with some hearty winter meals to warm us up. Some of my favourite meals at this time of year are casseroles, soups and stroganoff. Here is just one healthy and tasty recipe for you to enjoy on a cold winter evening.

Beef casserole

Preparation time: 10 mins
Cooking time: 40 mins

4 tsp of olive oil
240g of lean steak, cut into cubes
2 onions, sliced
2 small carrots, chopped
4 stalks of celery, sliced
2 cloves of garlic, crushed
800ml of vegetable stock
2 tbsp of plain flour
3 tbsp of red wine
1 large tin of tomatoes
4 tsp of Worcestershire sauce
1 tsp of dried rosemary
1 tsp of dried parsley
4 small potatoes, cut into bite-sized chunks
150g of mushrooms, sliced


1. Heat half the oil in a hot pan and brown the meat. Set aside.
2. Heat the remaining oil over a low-medium heat and add the onion, carrot, celery and crushed garlic, and fry for about 5 minutes, or until slightly softened. Add the stock, flour, sauce, tomatoes, herbs and the steak, bring to a boil.
3. After about 10 minutes, add the potato and the sliced mushrooms.
4. Simmer for a futher 20-25 minutes.
