Drinks:

Sparkling fruit water - with lemon, lime, strawberries, cucumber.


Salads and starters:

Cucumber salad with a citrus dressing - cucumbers, cherry tomatoes, and red onion.

Rainbow vegetable slaw - cabbage, kale, raisins, cranberries, carrot, red onion.

Fruit salad - watermelon, blackberries, strawberries, grapes, with mint.


Main dish:

Chicken or turkey salad sandwiches - made with low-fat Greek yogurt.

Bunless burger bites - small hamburger patties on skewers with tomatoes, lettuce, and pickle.

American style potato salad - made with red potatoes and low fat mayonnaise.

Grilled shrimp (prawn)/chicken skewers - using only lemon and lime as marinade.


Dessert:

Banana split kabobs (kebabs) - cut bananas, pineapple, strawberries, melted chocolate chips, and chopped peanuts. Skewer fruit and drizzle on chocolate and roll in peanuts.
