Tip 1: What about the size of those turkeys?
You don't have to prepare and serve a whole turkey. Most stores will only have turkeys as small as 10 to 12 pounds available and that is a lot of gobbles for two people. If you still want turkey but loathe the idea of that much meat, try serving herb roasted turkey breasts or legs instead.
Tip 2: You don't have to cook a turkey at all
Even though a whole turkey is considered the traditional meal to serve at Thanksgiving, many people opt to go with a smaller main course such as game hens, individual turkey meatloaves topped with mashed potatoes, or bacon-wrapped cheese and mushroom stuffed chicken breasts. This is a good time to be creative and try out some new gourmet recipes.
