Bacon and spinach pasta

Spaghetti and bacon are simply flavored with garlic and spinach in this quick and easy pasta dish.

250g of pasta, uncooked weight
1 tbs of olive oil
1 onion, chopped
2 cloves of garlic
200g of mushrooms
4 balls of frozen spinach
6 rashers of lean bacon
1 tsp of mixed herbs
2 tins of chopped tomatoes (400g each)

1. Cook the pasta following package directions, omitting any suggested fat or salt. When draining the pasta, reserve a little of the cooking water.
2. Heat the olive oil in a pan and add the chopped onions, and crushed garlic and cook for a couple of minutes to soften. Add the sliced mushrooms, spinach, tomatoes and herbs and cook for 8-10 minutes.
3. Meantime, grill the bacon and then cut into bite-sized pieces.
4. Stir the cooked and drained pasta into the vegetable sauce and bacon pieces. Cook until heated through and serve.
