This is a great power snack to make with bananas that have gone slightly over – not totally black, but with at least a few black spots so they are soft and sweet. Peel the banana and mash it roughly. Toast a thick slice of wholemeal or granary bread (and butter it if you like). Pile up the mashed banana on top, trickle a little runny honey over the top and sprinkle with sunflower or pumpkin seeds.
Tip: If you don't like banana, try stir-fried plums on toast. Just score round the outside, twist and remove the stone from each plum then cut the plums in quarters. Heat a little butter in a frying pan, add the plums and fry until they begin to soften. Add around a tbsp of sugar and a pinch of cinnamon and carry on frying until the edge of the fruit caramelises. This tastes particularly good with toasted malt bread and a dollop of yoghurt on top.
