Beetroot, bacon and feta salad

For youthful looking skin try this antioxidant-packed salad. The vibrant colours make it an attractive starter or main, and you are guaranteed to feel satisfied after eating it.


  • 4 lean bacon rashers
  • 100g beetroot
  • 60g low fat feta cheese
  • handful of lettuce leaves
  • 8 pecan nuts

1. Cook the bacon under a hot grill. Once cooked blot it carefully with kitchen roll to remove as much fat as you can. Leave to cool.

2. Slice the beetroot and chop the feta into small cubes. Cut the now cooled bacon into thin strips.

3. Combine the beetroot, feta and bacon with the lettuce leaves and pecans.
