Beetroot, orange & apple salad

A colourful and delicious autumn salad.


  • 700g beetroot
  • 100g swiss chard
  • 1 orange
  • 2 apples
  • 1 tbsp of olive oil
  • 2 tsps of red wine vinegar
  • 1/2 tsp of sugar
  • 1 clove of garlic
  • 2 tbsps of sunflower seeds

Wash and dry beet roots and chard.

Place beetroot in a saucepan with enough water to cover. Bring to boil, cover, reduce heat and simmer for 20 minutes or until tender. Drain and allow to cool.

Trim and peel off skins; cut into 8 wedges.

Peel and section orange and apple. In a bowl, combine orange sections, beetroot wedges and apples.

Whisk together olive oil, vinegar, sugar, salt and garlic. Pour over beetroot mixture and toss well.

Arrange sliced greens on 4 salad plates. Top with beetroot mixture, sprinkle with sunflower seeds and serve.
