Chicken & herb casserole

The kids are back in school, the weather is starting to get a bit cooler...what better time to create a simple and tasty dinner that the whole family can enjoy.

Chicken and herb casserole
Serves 4
Calories: 415 Fat: 12g Ingredients
8 tsps of olive oil
2 onions
200 g mushrooms
100 g carrots
2 tins of tomatoes, tinned, large can
4 chicken fillets, medium
12 potatoes, new
4 sprigs of fresh rosemary


Instructions
1. Preheat the oven to 200 C. Fry the onion in oil until transparent.
2. Add the mushrooms, carrot & tomatoes. Transfer to a warmed casserole dish and lay the chicken in the centre.
3. Cover with layers of potato. Sprinkle with rosemary and bake for about 1 hour.
