Fresh Brazilian Fish Stew

(Makes 4 serves)

Bring the warmth of Brazil into your house this winter, with this fresh fish stew. Low in salt and fat but high in protein, this tasty meal will help you to eat for your health.


  • 700g skinless bass, cut into chunks
  • 3 tbsp. olive oil
  • 2 bay leaves 
  • 2 tsp. paprika 
  • 1 clove garlic, crushed
  • 1 small onion, diced 
  • 1 green pepper, sliced 
  • 1 can chopped tomatoes 
  • ½ cup parsley 
  • Pinch salt and pepper 
  • 1 cup uncooked brown rice 


Cook the brown rice per the instructions. While the rice is cooking heat two tablespoons of oil in a saucepan on medium and add the bay leaves and paprika. After a minute, add the onion, pepper, parsley, tomatoes, garlic, salt and pepper. Fry the vegetables until soft. Add 1 cup of water and reduce the heat. Then place the fish pieces with the vegetables in the pan. Cover and let simmer until the fish is cooked, around 10 minutes. Then serve with a side of brown rice and top with a little parsley.
