Halloumi cheese is a delicious addition to any vegetarian meal.

250g pack of lite halloumi cheese
2 bags of watercress, spinach & rocket salad
200g cherry tomatoes, halved
100g sugar snap peas
4 tbsp of lower fat Greek yoghurt (this is a 2.7% fat yoghurt, as opposed to a 0% fat brand such as Totals or 10.2% full fat)
2 tbsp of lemon juice
2 tsp of fresh basil, chopped
2 tsp of fresh parsley, chopped
1. Preheat the grill to a high heat. Cut the halloumi cheese into six thin slices and grill until golden on both sides.
2. Meanwhile, in a bowl mix together the spinach, watercress and rocket salad, tomatoes, sugar snap peas and croutons.
3. For the dressing, mix together the Greek yoghurt, lemon juice, 1 tbsp of water, basil and parsley. Add the cheese and dressing to the salad, toss and serve.
