How to batter fish


210g self-rising flour (leave in the fridge for 20 minutes)

3 fish fillets

2 tsp. salt

250ml cold beer/lager or carbonated water

Cooking oil


- Mix the flour and salt in a bowl. Then gradually add the beer/larger or carbonated water into the mixture and whisk together

- Add oil to a deep frying pan or a saucepan. Then add a layer of cooking oil at the bottom and turn the heat up to 190°C. Watch out for splash back from the oil.

- Place the flour mixture and fish fillets next to the frying pan

- When the oil is hot and sizzling, dip one fish at a time into the batter mixture. Make sure all the fillet is coated in the mixture

- Then place the fish into the sauce pan and cook for 2-4 minutes or until the batter is gold and crispy. Do each fillet one at a time, heating up more oil if needed

- Place on a plate and serve
