How to cook pulled pork

1 large pork shoulder

1 tbsp. smoked paprika

2 tbsp. salt

1 tbsp. ground black pepper

2 tbsp. dark brown sugar

60ml ketchup or brown sauce

½ tsp. dry mustard

100ml water or stock

- Preheat the oven to 220°C

- Then line the oven tray or tin with a large sheet of foil

- Trim the pork fat off. Then pat the pork dry and place onto the oven tray

- After, mix the salt, pepper, paprika, brown sugar, apple vinegar, ketchup and water together

- Once you have made the mixture rub some of it onto the pork. Leave the rest for later

- Then place the pork into the oven for 50 minutes, then take it back out and cover the foil over the pork. You will also need to reduce the heat to 130°C. Let it cook for 4-6 hours. Every 2 hours pour more of the mixture onto the pork and place back in the oven

- Take the pork out from the oven and place on a large plate. With two forks, start pulling the pork apart. If it is not coming off easily, place in the oven for another 30 minutes

- You can add more barbecue sauce depending on your taste. You are then ready to serve
