This lentil and braised beef winter warmer will fill your belly with warmth and your house with the smell of deliciousness. You might even have your neighbours asking you about what you were cooking!
(Makes 5 servings)
1.5kg beef bottom round - fat cut off and cut into cubes
1 cup lentils
1 cauliflower - cut into small pieces
3 garlic cloves - crushed
4 tbsp olive oil
1 cup reduced salt beef stock
1 large onion - diced
2 tbsp Worcestershire sauce
2 bay leaves
2 large carrots - sliced
1 can diced tomatoes
1 tsp mixed herbs
On medium heat, pour 2 tbsp olive oil into a stockpot until oil starts to sizzle. Throw in the meat and lightly brown. Then set the meat aside.
Add 2 tbsp of olive oil to stockpot and then add the garlic until onions soften and brown. Put the beef back into the pot with the tomatoes, mixed herbs, stock, Worcestershire sauce and bay leaves. Bring to simmer covered on 160 degrees centigrade for 1 hour or until the beef is tender.
Add carrots, lentils and cauliflower and cook for a further 25 minutes or until vegetables and lentils are soft.
Remove bay leaves and serve with rye bread and topped with parsley.
