Ingredients4 medium mackerel fillets
1 tbsp of plain flour
1 tsp of ground paprika
1 tsp of coarsely ground black pepper
1 tbsp of vegetable oil
For the salsa2 tbsp of olive oil
1 red chilli, finely chopped
4 firm red tomatoes, finely chopped
2 tbsp of cider vinegar
1 tbsp of chopped coriander
1. Make the salsa by mixing all of the ingredients together and allow to stand for 30 minutes.
2. Mix the flour with the paprika and pepper. Coat the mackerel on both sides, patting off any excess with your hands.
3. Heat the oil in a frying pan and cook the mackerel, skin side down first, on a high heat for about 2-3 minutes on each side, making sure the skin is nice and crisp. Serve on warmed plates with the salsa spooned around.
