A quick and easy pork recipe that will add a touch of elegance to your night in.
- 400g of lean pork fillet
- 3 cloves of garlic
- 1 handful of fresh parsley
- 1 handful of fresh basil leaves
- 1 tbs olive oil
- 2 onions
- 200g mushrooms
- 1 tbs of tomato puree
- 4 tbs red wine
- 6 tomatoes

Place the pork fillet on a piece of cling film, place another piece on top and pound with a meat mallet or rolling pin to a thickness of ½cm (¼").
Sprinkle with the chopped herbs and roll up tightly, securing with a cocktail stick.
Heat the oil in a large, deep-sided frying pan over a high heat. Add the pork and cook, turning occasionally, for 6 minutes or until browned on all sides. Remove from the pan and set aside.
Add the sliced onion and mushrooms to the pan and cook over a high heat for 1 minutes. Mix the tomato puree with 1 tbs water then add to the pan with wine and tomatoes.
Return pork to the pan, reduce heat to low and cook gently for 20 minutes, or until tender.
As your pork cooks, boil new potatoes and vegetables and serve altogether.
