  • 2 bags of rocket salad
  • 16 cherry tomatoes, halved
  • 100g sugar snap peas
  • 4 tbsp of lower fat Greek yoghurt
  • 2 tbsp of lemon juice
  • 1 tbsp of fresh basil, chopped
  • 1 tbsp of fresh basil, chopped

1. Preheat the grill to a high heat. Cut the halloumi cheese into six thin slices and grill until golden on both sides..

2. Meanwhile, in a bowl mix together the rocket, tomatoes, sugar snap peas and croutons.

3. For the dressing, mix together the Greek yoghurt, lemon juice, 1 tbsp of water, basil and parsley. Add the cheese and dressing to the salad, toss and serve.

  • 1 tsp of peppercorns
  • 2 cinnamon sticks
  • 1 litre of water
  • 2 bay leaves
  • 1 piece of root ginger
  • 120g basmati rice, uncooked weight
  • 5 dried apricots
  • 4 tbsp of mango chutney
  • 1 tbsp of curry powder
  • 100g of low fat Greek yoghurt
  • 8 tbsp of light mayonnaise
  • 2 tbsp of chopped coriander
  • 2 tbsp of flaked almonds

1. Place the chicken in a large saucepan and add the cinnamon sticks, peppercorns, bay leaves and half of the ginger. Add the water until if just covers the chicken, cover and bring to a simmer. Gently cook for 15 minutes

2. Boil the rice. Finely chop the rest of the ginger. Dry fry the curry powder for approximately 30 seconds, then add the chopped ginger. Dry fry both for another 30 seconds, making sure they do not burn. Remove from the heat.

3. Chop the apricots and mix in a bowl with the mango chutney. Next add the dry-fried spices, mayonnaise and yoghurt.

4. When the chicken is cooked, remove from the pan, set aside to cool and then slice the meat into bite-sized pieces. Add the chicken to your Coronation dressing.

5. Serve the chicken with the rice and top with chopped coriander and almonds.

DESSERT: Barbecued banana topped with Greek yoghurt

1. Preheat the grill to a low heat.

2. Halve each of the bananas lengthwise, then widthwise. Sprinkle bananas with lemon juice. In a small bowl mix together the sweetener and cinnamon. Roll bananas in sweetener/cinnamon mixture until well coated

3. Lightly oil the grill grate. Arrange bananas on preheated grill and cook for 3 minutes per side. Top with Greek yoghurt.
