Recipe: Irish cabbage and potato soup

¼ large green cabbage, chopped
1 large onion, diced
1 stick of celery, chopped
1 pint of vegetable stock
1 carrot, peeled and chopped
Dark green tops of 3 leeks, sliced
1 large tomato, halved
4 medium potatoes, peeled and diced
Pinch of black pepper
4tbs of low fat crème fraiche

1.Bring the stock to the boil in a large pan. Add all the ingredients except for the crème fraiche and cabbage and stir.
2.Turn down the heat and simmer with the lid on, after about 10 minutes add the cabbage. Cook for another 10 minutes or until the potatoes are soft.
3.Leave to cool slightly, then whizz with a hand blender in the saucepan.
4.Check the seasoning and serve with 1 tbs of low fat crème fraiche into each bowl of soup.
