Spicy chilli beef wrap

Ingredients

  • Cooking spray
  • 1 large onion, chopped
  • 1 garlic clove, crushed
  • 200g lean mince beef
  • 1/2 beef stock cube, made up
  • 1 large tin of chopped tomatoes
  • 2 tbs tomato puree
  • 1 tbs dried chilli flakes
  • 4 tortillas
  • 1 handful of coriander, chopped
  • 3 tbs low fat sour cream
  • 1 head of lettuce

Method

1. Place the onion and garlic in a non-stick pan. Bring to a simmer over medium heat. Increase heat to high, add the mince and cook, breaking up the mince with a wooden spoon, for 10 minutes or until mince changes colour. Add in the beef stock as needed, to prevent mince drying up.

2. Stir in the tomatoes, tomato paste and chilli flakes, and bring to the boil. Reduce heat to low and cook, partially covered, for 20 minutes or until the mixture is thick.

3. To serve, spoon the mince mixture onto warmed tortillas, top with a dollop of low fat sour cream, sprinkle with coriander leaves, add in lettuce leaves and roll up.
