Steamed spring vegetables with bacon

Seasonal vegetables taste great when they're lightly cooked and dressed with lemon and garlic.

Ingredients

6 lean rashers of bacon
1 head of broccoli
200 g green beans
1 bunch (250g) of asparagus
1/2 green cabbage
2 tbsp of olive oil
½ lemon, juice only
1 fat clove of garlic
1 tbsp of Dijon mustard

Instructions

1. Grill the bacon under a pre-heated grill until crisp.

2. Meantime, bring a pan of water to the boil and, using a steamer basket or sieve, steam the small broccoli florets, sliced green beans and root end of the asparagus for 3 minutes. Add the asparagus tips and cabbage and steam for a further 2-3 minutes, until tender but still crisp. Transfer to a bowl, along with the bacon, cut into bite-size pieces.

3. Prepare the dressing by combining the oil, lemon juice, crushed garlic and mustard and use to dress the vegetables and bacon.
