Warm turkey sesame salad

No longer just recognisable as a staple at Christmas dinner, turkey makes a healthy meal all year round. Affordable, low in fat and calories and a great source of protein and B vitamins, it should be on your menu every week.

400g of turkey
2 tsp of sesame oil
2 tbsp of balsamic vinegar
2 cloves of garlic
2 cm piece of root ginger
1 chilli
Mixed salad leaves
200g of spinach
200g of mange tout
120g of sweetcorn
12 water chestnuts
4 tsp of sesame seeds
2 tbsp of sweet chilli sauce


1. Cut the turkey into thin strips and place in a glass or ceramic dish, along with the sesame oil, vinegar, garlic, ginger and chilli. Set aside to marinade for 30 minutes.

2. Meantime, prepare the salad by combining the salad leaves, sliced mange tout, sweetcorn and water chestnuts.

3. After the marinading time, heat a griddle pan or non-stick frying pan and cook the turkey strips over a medium high heat for 5-6 minutes, until cooked through.

4. Toss the turkey into the salad along with the chilli sauce and top with sesame seeds before serving.
