Lymes disease advice on early intervention

I was just wondering if I could ask you for some advice about Lyme disease. I was bit around 8 weeks ago (when in Italy) and didn't realise it was a tick bite until I got the rash. I went to the doctors and he prescribed me the doxycycline 100mg x2 per day for two weeks. I've had horrendous herxs at the beginning and only having slight symptoms coming and going now?
I did catch it early I believe but still have the rash on my leg but it has faded? I don't know if I need any more antibiotics or if this will be enough? Any advice would be great? I also already have fibromyalgia, chronic fatigue and syatica so sometimes it's hard to distinguish what is what? Would the bloods come back negative if the antibiotics have worked so I could possibly check? As I really want to try and get rid of this and it's difficult to find clear information on what is the best course of action?
I've also had to take antihistamines daily since the bite as my face and tongue keep swelling and going numb. I would say this has improved and haven't noticed it swelling the past three days or so?

Also forgot to say I'm on the last day of the two week course of antibiotics tomorrow

You didn't really catch it early enough to justify only giving you 2 weeks. They should have given you the month. Push for the maximum dose the guidelines say as after 6 weeks of untreated Lyme it should be treated aggressively as its now deeply nested so to speak. This is not an infection where you want to sit back and see what happens. People are getting sick with Lyme and staying sick and bring diagnosed with cfs and fibro when they don't get better. The evidence out there is showing Lyme persists.
Be prepared to find a Lyme literate doctor as a back up plan who will provide the longer term multiple antibiotic plan you may need. Look into treating Lyme naturally also alongside.
Antibiotics can effect Lyme testing but ask for it anyhow.

Thank you I'll get on to them today and ask for more then thank you for your advice. How do I find specialists in the uk? I read there aren't any on the NHS? Is this correct?
Do you think I'll get rid of it or is there still a possibility it may stick with me? The first gp doctor I saw was clueless and had to google it? Thankfully I got to see another doctor shortly after.
Do you recommend any sites where I can learn about what foods to eat and to learn more about it?
