Ingredients for Lemony cabbage with mint
240 ml fresh lemon juice
10 g dried mint
700 g cabbage, halved, very thinly sliced
10 ml kosher salt, plus more
60 ml extra-virgin olive oil, plus more
How to make Lemony cabbage with mint
Combine the lemon juice and mint in a large bowl.
Add the cabbage and 2 teaspoons of salt.
Toss the cabbage with your hands for a few minutes, squeezing to help soften it. The lemon juice and salt will continue to tenderise the cabbage as it sits.
Add 60 ml of oil and toss again to coat the cabbage evenly.
Cover the bowl with cling film and chill for at least 2 hours, or up to 12 hours.
To serve, taste the cabbage and adjust the seasoning with additional salt, then drizzle with a little more oil.
