Ingredients for Oregano-marinated tomato salad
1,350 g mixed heirloom tomatoes, cut into wedges or halved if small
30 ml extra-virgin olive oil
30 ml oregano leaves, from about 4 sprigs
10 ml kosher salt
5 ml freshly ground black pepper
How to make Oregano-marinated tomato salad
Toss the tomatoes, oil, oregano, salt, and pepper together in a medium bowl.
Leave the mixture to sit, tossing occasionally, for at least 30 minutes and up to 1 hour, until the tomatoes are juicy and deeply flavoured.
