Ingredients for Smashed cucumber salad with lemon and celery salt

  • 5 mini seedless cucumbers, or 1 small English hothouse cucumber (about 340 g)

  • kosher salt

  • 1 strip lemon zest (7.5 cm), very thinly sliced

  • 30 ml fresh lemon juice

  • 30 ml extra-virgin olive oil

  • 1.25 ml celery salt

  • plus more for serving

How to make Smashed cucumber salad with lemon and celery salt

  1. Gently smash the cucumbers with a rolling pin or the back of a heavy knife until they crack open. Tear them into irregular 5 cm pieces and place them in a medium bowl. Season lightly with salt and let them sit for at least 5 minutes and up to 1 hour.

  2. Meanwhile, whisk together the lemon zest, lemon juice, oil, and 1/4 teaspoon of celery salt in a medium bowl until well combined. Season the dressing with salt to taste.

  3. Drain the cucumbers, discarding any liquid they have released. Add the cucumbers to the bowl with the dressing and toss several times to coat them evenly.

  4. Sprinkle the cucumbers with additional celery salt before serving.
