Ingredients for The garlickiest fried rice
8 garlic cloves, thinly sliced
80 ml grapeseed oil or vegetable oil
kosher salt
5 cm piece ginger, peeled, finely chopped
1 large egg, beaten
720 g chilled cooked short-grain rice
10 ml toasted sesame oil
4 spring onions, thinly sliced on a diagonal
15 g coarsely chopped coriander
10 g toasted sesame seeds
How to make The garlickiest fried rice
Toss the garlic with grapeseed oil in a large non-stick frying pan. Arrange the garlic in a single layer and set the pan over medium heat. Cook, shaking the pan often, until the garlic is barely golden and crisp, and the oil stops bubbling, which should take about 5 minutes. Using a slotted spoon, transfer the garlic chips to paper towels to drain and season with salt.
Increase the heat to medium-high and add the ginger to the oil in the same frying pan. Stir occasionally until the ginger is just softened and fragrant, about 2 minutes. Add the egg and stir to break it up; cook until just set, which will take only a few seconds.
Add the rice and sesame oil, tossing to combine. Cook undisturbed, pressing down on the rice with a spatula to ensure it makes good contact with the pan until it begins to crisp, about 2 minutes. Toss the rice, then press down on it again, cooking until you achieve more crispy bits, about another 2 minutes.
Remove the frying pan from the heat and toss in the scallions and half of the garlic chips; season with salt.
Transfer the fried rice to a platter and scatter the cilantro, sesame seeds, and the remaining garlic chips on top.
Note that garlic chips can be made up to 1 day in advance; store them in an airtight container at room temperature.
