Ingredients for Veggie Italian hoagies
120 g giardiniera, drained, finely chopped, plus some brine from the jar
240 ml mayonnaise
4 soft Italian sub rolls (20 cm), split
4 large meaty tomatoes, sliced 1.5 cm thick
kosher salt, to taste
1 head iceberg lettuce, thinly shredded
freshly ground black pepper, to taste
olive oil, for drizzling
How to make Veggie Italian hoagies
Mix the giardiniera into the mayonnaise in a small bowl until well combined.
Thickly spread some of the giardiniera mixture over the bottom half of each roll.
Top each roll with slices of tomato and season with salt.
Layer on a generous amount of shredded lettuce, then season the lettuce with salt, pepper, and a splash of reserved giardiniera brine (about 15 ml per sandwich).
Drizzle with oil before serving.
