Ingredients for Watermelon with lime dressing and peanuts
30 ml fresh lime juice
15 ml fish sauce
7 g caster sugar
2 sprigs basil, plus leaves for serving
900 g baby seedless watermelon, rind removed, flesh cut into irregular bite-size pieces
35 g salted, dry-roasted peanuts
30 ml extra-virgin olive oil
flaky sea salt
How to make Watermelon with lime dressing and peanuts
Stir lime juice, fish sauce, sugar, and 15 ml of water in a large bowl until the sugar has dissolved.
Lightly crush 2 sprigs of basil by scrunching them in your hand and add them to the dressing along with the watermelon. Toss gently until the watermelon is well coated.
Transfer the watermelon salad to a platter, leaving the basil sprigs behind.
Top the salad with peanuts and fresh basil leaves, drizzle with oil, and season with salt to taste.
