Ingredients for Chilaquiles
480 g fried tortilla strips
480 ml salsa roja
4 eggs
480 g shredded queso Oaxaca (or mozzarella or Jack cheese if unavailable)
60 ml pickled jalapeños
1 avocado, cut lengthwise into 0.5 cm thick slices
120 ml chipotle crema, Greek yogurt or labneh
15 g coriander leaves
1/2 lime
Pinch of sea salt
How to make Chilaquiles
Preheat the oven to 200°C or set the grill to low.
Add the tortillas to a medium oven-safe dish or a cast-iron frying pan.
Top the tortillas with the Salsa Roja and crack the eggs on top.
Sprinkle the cheese over the eggs and bake for 15–20 minutes, or grill until the cheese is bubbling and just starting to brown.
Garnish with the jalapeños, avocado, and crema, and finish with a fresh squeeze of lime and a sprinkle of sea salt.
